Organic Sugar... or "Organic Evaporated Cane Juice"

When we asked our sugar supplier to send specific information about organic sugar that we could share with our customers, he sent a great bit of information. A sure sign the he's proud of the sugar he carries... and it is, wonderful sugar. Light blond in color, fine granulated, clean sugar at it's finest.

Organic Sugar (also known as Organic Evaporated Cane Juice) is sourced from a mill in Brazil that is certified as ECO- Social meaning it goes through an extensive review dealing with workers, pay, water and environmental impact, child labor, education, and much more. I have attached for your review the regulations and requirements needed to achieve this level of social economic responsibilities. We are proud that the sugar we supply bears this important seal. 

The sugar is of the highest quality we have seen in our families 60 + years of marketing experience in organic and natural sugars. The sugar does not go though the refined sugar process. Instead, it is produced at the sugar mill from fresh cut sugar cane. Once the cane is harvested, the stalks are crushed in a series of rollers to extract the juice. The fibrous material remaining from the stalk (bagasse) is used as a renewable energy source and is sent to the boilers to create steam for the mill.

The juice is then clarified using milk of lime to settle any field impurities to the bottom and the top juice that remains is then condensed by evaporation and vacuum until it reaches a point where the syrup will crystallize. The sugar is then spun in a centrifuge to remove excess water and molasses, dried, then packaged. All of these production steps are under GMP utilizing food grade hygienic conditions. (The mill is in process of FPA-Safe accreditation and expects to successfully complete the process by 2008.) The only process aid utilized in the production of organic evaporated cane juice is calcium carbonate or as more commonly referred to as milk of lime. 

The organic sugar we are supplying you is made in accordance to very strict quality assurance and organic authenticity protocols and is duly certified as such. Additional, the organic sugar is certified kosher.
